Hiyayakko (冷奴) is a dish where chilled tofu is enjoyed either plain or with seasonings and toppings. Depending on the toppings, you can experience various flavors, and in our household, it’s particularly popular to eat during the hot summer months. This time, I’ll introduce a recipe where I’ve made a twist to the popular combination of ginger & soy sauce, adding green onions and sesame oil. Tonjiru (豚汁) is one of the comfort food here in Japan. TON means “Pork” and JIRU (shiru) means “Soup”. This soup has a rich and mild flavor from pork and lots of vegetables. Since it requires lots of ingredients, we don’t make as often as miso soup at home but eat at the outdoor events or you can buy TONJIRU easily at bento specialty shops.
